Christmas Tree Cranberry Hand Pies

A fun and festive holiday dessert that’s adorable, flaky, and surprisingly simple to make. Perfect for Christmas parties, cookie exchanges, or gifting to neighbors.

🍒 Ingredients

For the Cranberry Filling

  • 2 cups fresh or frozen cranberries

  • ½ cup sugar

  • ¼ cup water

  • 1 tbsp lemon juice

  • 1 tsp vanilla

  • 1 tbsp cornstarch

For the Pastry

  • 2 pre-made pie crusts (or homemade)

  • 1 egg + 1 tbsp water (egg wash)

  • Coarse sugar for sprinkling

🥣 Instructions

1️⃣ Make the Cranberry Filling

  1. Combine cranberries, sugar, water, and lemon juice in a saucepan.

  2. Simmer 8–10 minutes until berries burst and mixture thickens.

  3. Stir in vanilla and cornstarch.

  4. Cool completely.

2️⃣ Prepare the Pastry Shapes

  1. Roll out pie crusts on a floured surface.

  2. Use a Christmas tree cookie cutter to cut matching pairs.

  3. Place half the shapes on a parchment-lined baking sheet.

3️⃣ Assemble the Hand Pies

  1. Add 1–2 teaspoons of cranberry filling to each bottom piece.

  2. Place the matching tree cutout on top.

  3. Seal edges with a fork for a rustic look.

  4. Cut 2–3 small slits in the top for venting.

4️⃣ Brush and Bake

  1. Brush tops with egg wash.

  2. Sprinkle with coarse sugar.

  3. Bake at 400°F (205°C) for 14–17 minutes or until golden brown.

Serving Tips

  • Serve warm with vanilla ice cream

  • Dust with powdered sugar for extra holiday charm
