Christmas Tree Cranberry Hand Pies
A fun and festive holiday dessert that’s adorable, flaky, and surprisingly simple to make. Perfect for Christmas parties, cookie exchanges, or gifting to neighbors.
🍒 Ingredients
For the Cranberry Filling
2 cups fresh or frozen cranberries
½ cup sugar
¼ cup water
1 tbsp lemon juice
1 tsp vanilla
1 tbsp cornstarch
For the Pastry
2 pre-made pie crusts (or homemade)
1 egg + 1 tbsp water (egg wash)
Coarse sugar for sprinkling
🥣 Instructions
1️⃣ Make the Cranberry Filling
Combine cranberries, sugar, water, and lemon juice in a saucepan.
Simmer 8–10 minutes until berries burst and mixture thickens.
Stir in vanilla and cornstarch.
Cool completely.
2️⃣ Prepare the Pastry Shapes
Roll out pie crusts on a floured surface.
Use a Christmas tree cookie cutter to cut matching pairs.
Place half the shapes on a parchment-lined baking sheet.
3️⃣ Assemble the Hand Pies
Add 1–2 teaspoons of cranberry filling to each bottom piece.
Place the matching tree cutout on top.
Seal edges with a fork for a rustic look.
Cut 2–3 small slits in the top for venting.
4️⃣ Brush and Bake
Brush tops with egg wash.
Sprinkle with coarse sugar.
Bake at 400°F (205°C) for 14–17 minutes or until golden brown.
