Garlic Herb Skillet Chicken Thighs (Crispy & Juicy One-Pan Dinner)
This one-pan chicken thigh recipe is everything you love about comfort food: crispy skin, juicy meat, and a rich garlic-herb pan sauce that’s spoon-licking good. Pan-seared to golden perfection, this easy stovetop chicken dinner is a total game-changer for weeknight meals or meal prep.
Ingredients
6–8 bone-in, skin-on chicken thighs
1 tbsp olive oil
Salt and pepper, to taste
1 tsp smoked paprika
1 tsp garlic powder
½ tsp dried thyme
4 cloves garlic, minced
½ cup chicken broth
2 tbsp unsalted butter
1 tbsp fresh parsley, chopped (for garnish)
Optional: a squeeze of lemon for brightness
Instructions
Prep the chicken: Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, paprika, garlic powder, and thyme.
Sear: Heat olive oil in a large cast iron or stainless steel skillet over medium-high heat. Place chicken skin-side down and cook for 5–7 minutes, until skin is golden and crispy. Flip and cook another 3–4 minutes.
Add garlic & broth: Push chicken to the side, reduce heat to medium, and add garlic. Sauté 30 seconds. Pour in chicken broth, then nestle the chicken back in.
Simmer: Add butter to the pan. Cover loosely and simmer on low for 12–15 minutes, or until internal temperature reaches 175°F.
Garnish & serve: Spoon pan juices over chicken, sprinkle with parsley, and serve hot. Great with mashed potatoes, rice, or crusty bread!
