For the Roast Chicken

2 tbsp olive oil or softened butter
Salt & black pepper

1 tsp onion powder

4–5 garlic cloves, smashed
1 lemon, halved
Fresh rosemary & thyme sprigs
For the Vegetables
1 lb baby potatoes, halved
4–5 large carrots, chopped
2–3 shallots or 1 red onion, quartered
2 tbsp olive oil
Salt & pepper
Fresh herbs (rosemary, thyme)
For the Pan Gravy
Drippings from the roast
1 tbsp flour
1–2 cups chicken broth
Salt & pepper to taste
Optional: splash of white wine
How to Make This Cozy Sunday Dinner
1️⃣ Prep the Chicken
Pat the chicken dry (crispier skin!).
Rub with olive oil or butter, then season with salt, pepper, garlic powder, onion powder, and smoked paprika.
Stuff the cavity with lemon, garlic, and herbs.
2️⃣ Add the Veggies
Place potatoes, carrots, and shallots in your cast iron or roasting pan.
