Spinach & Cheese Stuffed Chicken (One Skillet Recipe)

Juicy, pan-seared chicken breasts are loaded with a rich, creamy filling of spinach, cream cheese, and sun-dried tomatoes — all cooked to golden perfection in one cast iron skillet. It’s easy, impressive, and low-carb friendly!

Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper, to taste

For the filling:

  • 4 oz cream cheese, softened

  • ½ cup shredded mozzarella or cheddar

  • ¼ cup grated Parmesan

  • 1 cup fresh spinach, chopped

  • ¼ cup sun-dried tomatoes, chopped

  • 1 clove garlic, minced

  • Salt & pepper to taste

Instructions

  1. Prep chicken: Slice a pocket into each chicken breast (don’t cut all the way through). Season both sides with olive oil, paprika, garlic powder, salt, and pepper.

  2. Make filling: In a bowl, mix cream cheese, spinach, mozzarella, Parmesan, garlic, and sun-dried tomatoes until well combined.

  3. Stuff & sear: Divide filling and stuff each chicken breast. Secure with toothpicks if needed. Sear in a hot skillet over medium-high heat for 4–5 minutes per side.

  4. Finish in oven: Transfer skillet to a 375°F (190°C) oven and bake for 12–15 minutes, or until chicken reaches 165°F internal temp.

  5. Serve hot with roasted veggies, mashed potatoes, or over cauliflower rice.
