Spinach & Cheese Stuffed Chicken (One Skillet Recipe)
Juicy, pan-seared chicken breasts are loaded with a rich, creamy filling of spinach, cream cheese, and sun-dried tomatoes — all cooked to golden perfection in one cast iron skillet. It’s easy, impressive, and low-carb friendly!
Ingredients
For the chicken:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
For the filling:
4 oz cream cheese, softened
½ cup shredded mozzarella or cheddar
¼ cup grated Parmesan
1 cup fresh spinach, chopped
¼ cup sun-dried tomatoes, chopped
1 clove garlic, minced
Salt & pepper to taste
Instructions
Prep chicken: Slice a pocket into each chicken breast (don’t cut all the way through). Season both sides with olive oil, paprika, garlic powder, salt, and pepper.
Make filling: In a bowl, mix cream cheese, spinach, mozzarella, Parmesan, garlic, and sun-dried tomatoes until well combined.
Stuff & sear: Divide filling and stuff each chicken breast. Secure with toothpicks if needed. Sear in a hot skillet over medium-high heat for 4–5 minutes per side.
Finish in oven: Transfer skillet to a 375°F (190°C) oven and bake for 12–15 minutes, or until chicken reaches 165°F internal temp.
Serve hot with roasted veggies, mashed potatoes, or over cauliflower rice.
