Sunday Roast Dinner with Beef, Crispy Potatoes & Veggies

There’s something special about a Sunday dinner that brings everyone to the table. This classic family-style roast has everything a perfect Sunday spread needs: tender slices of roast beef, crackling golden potatoes, caramelized root vegetables, buttery Yorkshire puddings, and a glossy homemade gravy tying it all together. Ingredients
For the Roast Beef
3–4 lb beef roast (top sirloin, rump, or rib roast)
2 tbsp olive oil
Salt & pepper
1 tsp rosemary
1 tsp thyme
4 cloves garlic, smashed
For the Yorkshire Puddings
1 cup flour
1 cup milk
3 eggs
¼ tsp salt
2–3 tbsp beef drippings or oil
For the Veggies
1 lb carrots, halved
1 lb parsnips, halved
1 lb Brussels sprouts, halved
1 red onion, quartered
1 bulb garlic, halved
Olive oil, salt & pepper
For the Roast Potatoes
2 lb potatoes, peeled & chopped
Salt
¼ cup oil or beef drippings
1 tsp rosemary
For the Gravy
Pan drippings
2 cups beef broth
1 tbsp flour
Splash of Worcestershire sauce
How to Make This Sunday Dinner
1️⃣ Prep and Roast the Beef
Preheat oven to 425°F (220°C).
Rub beef with oil, salt, pepper, rosemary, thyme.
Place in a cast iron pan with smashed garlic.
Roast 20 minutes, then lower heat to 350°F (175°C).
Cook 45–75 minutes depending on desired doneness.
Rest 15 minutes before slicing.
2️⃣ Roast the Vegetables
Toss carrots, parsnips, Brussels sprouts, onion, and garlic with oil, salt, and pepper.
Roast on a sheet pan for 25–35 minutes until caramelized.
3️⃣ Make Crispy Roast Potatoes
Boil potatoes 8 minutes until edges soften.
Drain and shake in the pot to rough them up.
Toss in oil/drippings + rosemary.
Roast 35–45 minutes until golden and crisp.
4️⃣ Yorkshire Puddings
Whisk flour, milk, eggs, and salt.
Let batter rest 20 minutes.
Heat drippings in muffin tin until smoking.
Pour in batter and bake 20–25 minutes until tall and golden.
5️⃣ Make the Gravy
Place cast iron pan on stovetop.
Whisk flour into pan drippings.
Slowly add broth and Worcestershire.
Simmer until thick and glossy.
6️⃣ Gather & Serve
Slice the roast.
Pile on potatoes, veggies, and Yorkshire puddings.
Serve with hot gravy.
